Super yummy pumpkin bars… Paula Deen Style!

Unfortunately, I cannot take credit for today’s recipe… but I will say that I have tried MANY pumpkin bar’s in my life and this is by far my favorite (and seriously too easy to mess up or have taste bad)!  This is probably one of my favorite recipe’s of all time but I don’t get to make it as often as I want because my husband hates all thing “pumpkin”!

Every holiday season, Food Network has special shows dedicated just to Thanksgiving and/or Christmas.  Last year, I just happened to watch one of these episodes and am SO thankful I did.  I would never never been introduced to this recipe… thank you Paula Deen!  You, all your butter and sweets… you are my hero!

So…. since I was hosting a little going away party for a good girlfriend this past weekend and us girl’s always hang out over desserts, snacks, and of course alcohol, I thought it was the perfect time to bust the pumpkin out!  Here we go….

Melt the butter… add cake mix to the bowl… add butter… eggs… and watch the mixture get nice and clumpy!  It will feel and look like cookie dough… then add it to a greased pan!

Press it down and sever so slightly up the edges… set that aside and lets open up the pumpkin and softened cream cheese!  Um, by the way, use the SAME bowl for this next part!  No need to dirty a new one:)

Beat the mixture until it is smooth…

Add the eggs… more melted butter… vanilla… cinnamon… then add the powdered sugar.  I added a bit of fresh nutmeg also:)

Whip it up again, pour OVER the uncooked crust, and bake for exactly 45 minutes (according to my oven anyways!)!  The bars won’t be entirely firm so don’t worry if there is still some jiggle to them!  They will set up as they cool!  In the meantime, you can choose to clean up your mess or leave it for your husband like I did!

Throw some vanilla ice cream on those bad boys while they are still warm, close your eyes, and take a big heavenly bite.  Seriously, this is a moment you have to just enjoy by yourself…
