‘Pretty Fit Greens’ Strawberry Vinaigrette

I seriously ADORE salads and eat a HUGE one each and ever single day!  Even when my family goes out to eat, unless cheeseburgers are on the menu, I will usually end up ordering a salad just because I truly enjoy all of those flavors, textures, and endless possibilities.  I may even go out on a limb and say that salads are one of top five favorite meals of all time.  If done properly, salads can be jam packed with tons of vitamins, minerals, and all things good for you… I really can’t find one reason why they shouldn’t be incorporated into everyone’s daily menu!  Again, if you do them up right, they are addicting!

One of the reasons why salads have my whole heart is they are extremely versatile.  The contents change slightly from day to day for me, but it’s a meal I never get tired of.  Never ever never!  My typical salad contents are romaine lettuce, power greens (kale, spinach, chard), some type of fruit (usually berries), chia seeds or hemp hearts, cucumber, asparagus, and some type of toasted nut (usually almonds or walnuts).  Every now and then I will add a grain like red quinoa or even brown rice, but because I usually have a sandwich alongside my salads, I usually keep the carbs for that.  If I’m not having that sandwich though, a grain will always be included!  I always make my own simple dressing at the beginning of the week, so I can have my salad ready to go in under 3 minutes each day.  I have used the same recipe nearly every single time, nearly every single day and while I love it, I recently came up with a wild idea for a new way to dress my salads that packed an even bigger nutrient punch!

I have no idea what was going through my head at the time, but one day after I finished making my daily ‘green‘ smoothie, the idea hit me like a ton of bricks… why not use the ‘Pretty Fit Greens‘ in a more savory form, a vinaigrette dressing of course!!!!  I had no idea if it would work, but after one taste, I gave myself a pat on the back and thought “Nice one Corina, real nice!”  The Pretty Fit Greens are so fine in texture, they blend & mix up perfectly and I LOVE the added benefits of them as well: more energy, helps with digestion, and full of vitamins/minerals/antioxidants!

Also, because the ‘Pretty Fit Greens‘ are DELICIOUS & slightly sweet already, the vinaigrette doesn’t need a ton of  ingredients.  I can also easily substitute things like raspberries or blueberries for the strawberries I used if need be and it will be equally easy & delicious!  I threw everything in my mini food processor and within a couple of minutes I had a new favorite ‘go to’ dressing!   Like my original dressing, I can still prep this at the beginning of the week and enjoy it on my salad every single day!

Same salad base as usual: romaine lettuce, power greens, asparagus, cucumber, hemp hearts, almonds, strawberries, and freshly sliced peaches (grilled ones would be even more AMAZING)!

Pretty Fit Greens Strawberry Vinaigrette

Serves 4
Prep time 5 minutes

Ingredients

  • 1/3 cup apple cider vinegar
  • 1/4 cup balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons chicken/vegetable stock or water

  • 1/2 cup strawberries
  • 1 teaspoon roughly chopped garlic
  • salt & pepper to taste
  • Sweet Leaf Stevia to taste

Directions

Step 1
Combine all ingredients in a small food processor or blender and mix on high until smooth. Add salt, pepper, and stevia to taste.

    Do you cook your asparagus before putting in on your salad? Or just use it raw? Never thought about putting asparagus on salad, but, why not!

      I LOVE grilled asparagus and think that would be even better on this, but for something quick… raw works for me!
