Anatomy of a Protein Poptart

“Protein Pop Tarts” are probably one of my all time favorite snacks EVER.  Like so many of my other meal staples (pancakes, French Toast, waffles, etc.), these little guys are extremely versatile and the flavor combinations are infinite!  So many possibilities, quick to make, and they are seriously delicious, it’s a win win all around.  I can literally eat these anytime of day, all day, all night!

Whenever I do share one of these little creations on my Instagram or Pinterest accounts, I get emails asking me how they are made/folded up so I thought it would be much easier to create this little tutorial for people to reference!

Basic Recipe:

Ingredients Needed-

  • 1/2 scoop (about 2 tbsp) protein powder
  • 1/2 tbsp coconut flour
  • 3-4 tbsp water or unsweetened almond milk
  • 1 tortilla of choice
  • toppings of choice (I usually use peanut butter or more protein powder mixed and thinned down with water)
  • sprinkles…. these are always a must

Method-

  • mix protein powder, coconut flour, and water until you have a thick smooth consistency
  • spread mixture in the center of the tortilla in the shape of a square or rectangle
  • add additional fillings if desired (I used a chopped up Quest Bar in this one) but sliced fruit and/or peanut butter work well also
  • fold one side over mixture, fold the opposite side over that to overlap, then fold in the remaining two sides until you have a nicely sealed “package”
  • cook pop tart in a pre heated skillet or panini press until golden brown and crisp
  • top as desired… and don’t forget the sprinkles!
