March- Banana Nut Muffins

Ingredients

  • 1/2 cup quick oats
  • 1 cup Kodiak Cakes "Power Cakes"
  • 1 scoop vanilla or cinnamon roll protein powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 Large eggs
  • 1/4 cup milk of choice
  • 1 Large very ripe banana
  • 3 tablespoons sugar free maple syrup
  • 1/4 cup chopped walnuts

Directions

Step 1
Preheat oven to 350 degrees and coat a muffin tin with non stick spray or line with cupcake liners.
Step 2
Add all ingredients (except walnuts) to a large bowl or stand mixer. Mix on high until well combined and smooth.
Step 3
Divide and portion muffins into pan. Sprinkle on walnuts. Bake for 17-19 minutes until a toothpick comes out clean when poked through the center.
