Parmesan and Mushroom Chicken Skillet


  • 4 chicken breasts
  • 1 cup mushrooms
  • 1 Large onion
  • 1 tablespoon garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon ghee or butter
  • 1 tablespoon olive oil
  • 1/2 cup unsweetened cashew or almond milk
  • 1/2 cup chicken stock
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons apple cider vinegar


Step 1
Preheat a cast iron skillet under medium high heat. Add ghee/butter and olive oil. Lightly season chicken breasts with salt and pepper. Brown chicken on both sides for 1-2 minutes. Remove chicken from pan.
Step 2
Add mushrooms, onion, and garlic. Lightly saute for 2-3 minutes until slightly softened. Deglaze pan with apple cider vinegar. Stir in chicken stock and milk. Season with the salt and pepper. Add chicken back into the pan and simmer for 10-15 minutes. Sprinkle on parmesan cheese.
