Butterscotch Cookies

Ingredients

  • 1 1/2 cup Kodiak Power Cakes
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup softened butter
  • 3/4 cups coconut sugar
  • 1/3 cup Vanilla MuscleEgg egg whites
  • 1 teaspoon vanilla extract
  • 1/3 cup butterscotch chips
  • 1 teaspoon coconut oil
  • 1/4 cup chopped pecans

Directions

Step 1
Preheat oven to 350 degrees and line 2 large baking sheets with parchment paper.
Step 2
Add dry ingredients to a medium sized bowl (Kodiak, baking soda, salt, and cinnamon ). Set aside.
Step 3
Add butter and coconut sugar to a large bowl or stand mixer. Beat until pale in color. Add vanilla extract and MuscleEgg. Mix on high until fluffy.
Step 4
Slowly add dry ingredients to wet ingredients in two batches, mixing well between each addition. Portion and divide cookies onto prepared pan. Bake for 10-12 minutes.
Step 5
Add coconut oil and butterscotch chips to a small bowl. Microwave on high for 30 seconds. Mix and reheat for an additional 30 seconds until chips are melted. Pour a couple one teaspoon onto each cookie. Add extra butterscotch chips and chopped pecans.
