Step 1

| Preheat oven to 350 degrees and line a mini cupcake pan with paper liners or non stick spray. |

| Combine all cupcake ingredients into a large bowl and mix on high until smooth. Divide and pour into cupcake pan. |

| Bake for 10-12 minutes until a toothpick comes out clean when poked through the center. Remove from oven and let cool completely. |
Step 4

| Prepare frosting by adding butter to a large bowl or stand mixer. Beat on high for 1 minute. With mixer on, add egg nog, vanilla, nutmeg, and food coloring. Beat on high for 1 minute. Slowly add in powdered stevia. Add food coloring. Frost cooled cupcakes and add winter sprinkles if desired. |
