Winter Egg Nog Cupcakes

Ingredients

  • 1 1/3 cup Kodiak Cakes "Power Cakes"
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 Large whole egg
  • 1/2 cup coconut sugar
  • 1/4 cup melted butter or coconut oil
  • 1 cup egg nog
  • 1 tablespoon apple cider vinegar
  • 1/2 cup egg nog (** frosting **)
  • 1 cup softened butter (** frosting **)
  • 1 teaspoon vanilla extract (** frosting **)
  • 1/4 teaspoon nutmeg (** frosting **)
  • 1/2 cup powdered stevia
  • 5-10 drops blue food coloring (** frosting **)

Directions

Step 1
Preheat oven to 350 degrees and line a mini cupcake pan with paper liners or non stick spray.
Step 2
Combine all cupcake ingredients into a large bowl and mix on high until smooth. Divide and pour into cupcake pan.
Step 3
Bake for 10-12 minutes until a toothpick comes out clean when poked through the center. Remove from oven and let cool completely.
Step 4
Prepare frosting by adding butter to a large bowl or stand mixer. Beat on high for 1 minute. With mixer on, add egg nog, vanilla, nutmeg, and food coloring. Beat on high for 1 minute. Slowly add in powdered stevia. Add food coloring. Frost cooled cupcakes and add winter sprinkles if desired.
