Cranberry Orange Muffin Tops

Ingredients

  • 2 1/2 cups Kodiak "Super Foods" baking mix
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 cup coconut sugar
  • 1 tablespoon orange zest
  • 1/2 cup butter or coconut oil
  • 3/4 cups milk of choice
  • 1/4 cup orange juice
  • 1 1/2 cup dried cranberries

Directions

Step 1
Preheat oven to 375 degrees and coat a muffin top pan with non stick spray.
Step 2
Add all ingredients (except cranberries) to a large bowl or stand mixer. Mix well until smooth. Stir in cranberries.
Step 3
Portion and divide batter into prepare pan. Bake for 15-17 minutes or until a toothpick inserted into the center comes out clean.
