Ingredients
- 2 1/2 cups Kodiak "Super Foods" baking mix
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 cup coconut sugar
- 1 tablespoon orange zest
- 1/2 cup butter or coconut oil
- 3/4 cups milk of choice
- 1/4 cup orange juice
- 1 1/2 cup dried cranberries

Preheat oven to 375 degrees and coat a muffin top pan with non stick spray. | |
Step 2 | |
Add all ingredients (except cranberries) to a large bowl or stand mixer. Mix well until smooth. Stir in cranberries. | |
Step 3 | |
Portion and divide batter into prepare pan. Bake for 15-17 minutes or until a toothpick inserted into the center comes out clean. |
