Perfect Keto Meatballs

Ingredients

  • 1lb grass fed ground beef
  • 1 Large whole egg
  • 3 heaped tablespoons tomato paste
  • 1 Small onion (finely chopped)
  • 1 clove garlic (finely minced)
  • 1/4 cup parmesan cheese (finely grated)
  • 1/4 cup flax meal
  • 2 tablespoons Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup low carb marinara sauce
  • 2 tablespoons olive oil or butter

Directions

Step 1
Add all ingredients EXCEPT ground beef and marinara sauce to a large bowl. Mix until well combined.
Step 2
Add ground beef to mixture. Mix with hands until all ingredients are well incorporated.
Step 3
Grab some of the meat mixture with a small cookie scoop or spoon and press into the palm of your hands. Place a piece of the mozzarella cheese in the center and form meat into a ball around it. Place meatballs on a cookie sheet.
Step 4
Preheat a cast iron skillet and coat with olive oil or butter. Add meatballs to skillet and brown on all sides. Reduce heat and pour marinara sauce over meatballs. Simmer for 10-15 minutes.
Step 5
Top with extra parmesan cheese and fresh parsley if desired.
