Step 1

| Turn Instant Pot on, press the SAUTE function, and add +10 minutes. Pour in olive oil and add chicken thighs. Brown on each side for 2-3 minutes until golden brown. Remove from Instant Pot. |
Step 2

| Add onions and garlic to pot and saute for 2-3 minutes. Add lemon zest, salt, pepper, lemon juice, lemon zest, and chicken broth. Return chicken thighs to the pot. |
Step 3

| Turn Instant Pot OFF, then ON again and press MANUAL, then add +25 minutes. Replace cover and close valve. When timer goes off, release pressure manually. Serve over cauliflower rice or alongside veggies of choice. |
