Low Carb Instant Pot Roasted Red Pepper Alfredo

Ingredients

  • 1 tablespoon olive oil
  • 2 teaspoons chopped garlic
  • 1 Large head of cauliflower (chopped into 2" pieces)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup chicken broth
  • 1/2 cup coconut milk (from a can)
  • 1/4 cup nutritional yeast
  • 1/2 cup shredded almond cheese or dairy free cheese of choice
  • 1/3 cup roasted red bell peppers

Directions

Step 1
Turn Instant Pot ON, press MANUAL, add +6 minutes. Add olive oil and garlic to the bottom of the pot. Let heat for 1-2 minutes.
Step 2
Add coconut milk, broth, salt and pepper. Replace lid and close valve. When timer goes off, release steam manually. Place contents to a high speed blender. Add nutritional yeast, roasted red peppers, and shredded cheese. Blend on high until smooth. Adjust seasoning as desired.
Step 3
Serve over noodles of choice.
