Ingredients
- 1 tablespoon olive oil
- 2 teaspoons chopped garlic
- 1 Large head of cauliflower (chopped into 2" pieces)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup chicken broth
- 1/2 cup coconut milk (from a can)
- 1/4 cup nutritional yeast
- 1/2 cup shredded almond cheese or dairy free cheese of choice
- 1/3 cup roasted red bell peppers

Turn Instant Pot ON, press MANUAL, add +6 minutes. Add olive oil and garlic to the bottom of the pot. Let heat for 1-2 minutes. | |

Add coconut milk, broth, salt and pepper. Replace lid and close valve. When timer goes off, release steam manually. Place contents to a high speed blender. Add nutritional yeast, roasted red peppers, and shredded cheese. Blend on high until smooth. Adjust seasoning as desired. | |

Serve over noodles of choice. |
