Instant Pot Italian Sausage Vegetable Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 Small onion
  • 2 cloves garlic (finely chopped)
  • 1lb ground sausage
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Large zucchini (sliced)
  • 3 stalks celery (cut into 2" pieces)
  • 1/3 cup baby carrots
  • 1 tablespoon Italian seasoning blend
  • 2 tablespoons tomato paste
  • 18oz crushed tomatoes
  • 3 cups chicken broth

Directions

Step 1
Turn Instant Pot on and press SAUTE function + 10 minutes. Add olive oil to pot with onions and garlic. Cook for 1 minute.
Step 2
Add ground sausage, salt, and pepper to pot. Crumble and brown sausage. Stir in remaining vegetables, tomato paste, Italian seasoning mix, crushed tomatoes, and stock. Stir well to combine.
Step 3
Turn OFF Instant Pot, then turn it back on and press MANUAL +20 minutes. When time is up, release pressure manually. Re-season to taste.
