Ingredients

  • 1 cup baking stevia or sweetener of choice
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup white chocolate chips
  • 3/4 cups chopped macadamia nuts
  • 1 cup softened butter
  • 2 Large whole eggs
  • 2 1/4 cups Kodiak Cakes all purpose baking mix
  • 1/2 teaspoon baking soda

Directions

Step 1
Preheat oven to 375 degrees (F). Line 2 large baking sheets with parchment paper.
Step 2
In a medium-sized bowl whisk together the flour, baking soda, and salt, set aside.
Step 3
In a large bowl or stand mixer combine the sweetener, vanilla, and butter. Cream on medium-speed until light and fluffy; about 2 minutes. Add the eggs and beat for only about 30 seconds. Slowly fold in the flour mixture, stirring only until the flour begins to disappear. Fold in white chocolate chips and macadamia nuts.
Step 4
Portion, divide, and place cookie dough on prepared baking sheets. Bake for 11-14 minutes, or until golden at the edges but still soft in the middle. Let cookies cool for 5 minutes on the sheet before transferring to a wire rack to cool completely.
