21- Baked Avocado & Eggs

Ingredients

  • 1 Medium avocado
  • 2 Large whole eggs
  • 2 thick slices bacon
  • 1 tablespoon chives or green onion

Directions

Step 1
Preheat oven to 425 degrees.
Step 2
Slice open avocado and remove seed. Place each half of avocado in a cupcake holder/tin. Crack and egg into each 1/2 of the avocado. Depending on the size of your avocado seed, you may have to remove some of the flesh in order for the egg to fit.
Step 3
Sprinkle with a pinch of salt and pepper. Bake for 14-16 minutes until egg is set. Meanwhile, fry up bacon until crispy.
Step 4
Remove avocado from oven, sprinkle with chopped herbs and bacon.
