21- Breakfast Roll Ups

Ingredients

  • 3 Large whole eggs
  • 2 tablespoons heavy cream
  • 1/4 teaspoon salt
  • 1 pinch pepper
  • 1/3 cup cheddar cheese
  • 4oz sliced ham
  • 1 tablespoon finely chopped chives

Directions

Step 1
Heat a small cast iron skillet or pan under low-medium heat and melt butter. Beat eggs, heavy cream, salt, and pepper in a small bowl. Add eggs to pan and cook under low heat for 2-3 minutes. You want to under cook eggs slightly because they will finish cooking in the oven. Sprinkle on cheddar cheese and stir. Remove from heat.
Step 2
Place a slice of ham on a work surface or cutting board. Add some scrambled eggs to ham. Roll ham, press to seal, and place on a sheet pan. Repeat with remaining ingredients.
Step 3
Place sheet pan under broil in the oven until ham is golden brown and crisp.
