Ingredients
- 1 tablespoon olive oil
- 1 cup sliced mushrooms
- 1lb Italian ground sausage
- 1 Medium head of cauliflower (chopped into 1)
- 1 1/2 cup low carb marinara sauce
- 2 teaspoons garlic powder
- 1 teaspoon Italian seasoning blend
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 Large cloves garlic (finely minced)
- 1 cup mozzarella cheese
- 1/4 cup grated parmesan cheese
- 16 thin slices pepperoni

| Preheat oven 400 degrees and coat a 9x9 baking dish with non stick spray. | |

| Add olive oil to a large cast iron pan or pot. Saute sliced mushrooms with 1/4 teaspoon of salt for 3-5 minutes until softened. Stir in cauliflower and cook for an additional 5-6 minutes. Add sausage and cook until browned. Remove from heat and let mixture cool slightly. | |

| In a large bowl add marinara sauce, garlic, spices, and seasonings. Mix well until combined. Add cauliflower, mushrooms, and cooked sausage mixture. Stir well until evenly coated. Pour into prepared baking dish. Top with mozzarella cheese, sprinkle with an additional 1/2 teaspoon of oregano. Bake for 20-25 minutes until cheese is melted and golden brown. Sprinkle with parmesan cheese. Slice and serve. | |
