Ingredients

  • 2 Large whole eggs
  • 2/3 cups strawberry preserves or jelly
  • 3/4 cups flour
  • 1/4 cup MuscleEgg 'strawberry' egg whites
  • 1 teaspoon baking powder
  • 3/4 cups stevia baking blend or sweetener of choice
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/3 cup milk of choice
  • 1 teaspoon vanilla extract

Directions

Step 1
Preheat oven to 375°F and line 15x10x1 inch pan with parchment paper. Generously grease paper non stick spray or butter.
Step 2
In medium bowl or stand mixer, beat eggs and egg whites on high speed about 5 minutes or until very thick and lemon colored. Gradually beat in stevia/sugar. Beat in milk and vanilla on low speed. Slowly add flour, baking powder and salt. Beat just until smooth. Pour into prepared pan, spread completely to corners.
Step 3
Bake 12 to 15 minutes or until toothpick inserted in center comes out clean. Immediately loosen cake from sides of pan and turn upside down onto a large kitchen towel generously sprinkled with powdered sugar. Carefully remove parchment paper. While cake ¡s hot, carefully roll cake and towel from narrow end. Cool on cooling rack at least 30 minutes.
Step 4
When cake is completely cooled, unroll and remove towel. Spread jelly over cake. Roll up cake. Sprinkle with powdered sugar.
