Step 1

| Add olive oil, lemon juice, lemon zest, garlic, seasonings, and spices to a large bowl. Whisk well until combined. Add chicken and coat. Cover and let marinade in the fridge for 2-3 hours. |

| When you are ready to cook chicken, heat a grill pan and brush with olive oil or coat with non stick spray. Cook chicken on both sides for 3-4 minutes until cooked through. Remove from heat and let rest. |

| Serve over romaine lettuce, red onion, tomato, olives, and optional feta cheese. Garnish with fresh parsley. Use dressing if desired. |
