Step 1

| Turn the Instant Pot on and press SAUTE +10 minutes. Add the cinnamon stick, star anise, peppercorns, coriander seeds, and cloves. Toast them for 4-5 minutes, or until very fragrant. Remove the spices to a bowl. |

Step 2

| Add the butter to the pot then add the sliced onion, ginger, and whole garlic cloves. Cook for5-6 minutes until onion is charred. |

Step 3

| Add the spices back to the pot with the oxtail, apple cider vinegar, fish sauce, sweetener, salt, and pepper. Pour in 7-8 cups of water to cover ingredients (but below the MAX line). Return lid, close valve, turn Instant Pot off, then back on and press MEAT/STEW +55 minutes. |

Step 4

| When timer goes off, press CANCEL and naturally release pressure. Strain soup through a fine mesh strainer, removing bones and reserving the as much meat as possible. With soup still piping hit, stir in think slices of flank steak. Adjust seasoning to taste with additional salt, pepper, more fish sauce, etc. |

Step 5

| Portion and divide soup into bowls. Serve with zucchini noodles or Miracle noodles if desired and optional toppings. |
