21- Sheet Pan Lemon & Herb Salmon

Ingredients

  • 2lb salmon filet
  • 3 tablespoons butter or ghee (softened)
  • 3 cloves garlic (finely minced)
  • 1 Large lemon (zest and 1/3 cup of juice reserved)
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 Large bunches asparagus
  • 3 tablespoons parsley (roughly chopped)
  • 1 Small lemon (sliced for garnish)

Directions

Step 1
Preheat oven to 450 degrees F and ine a large rimmed baking sheet with parchment paper.
Step 2
In a small bowl add butter, garlic, lemon zest, lemon juice, salt, pepper, and dried thyme. Mash together to form a thick paste.
Step 3
Add asparagus to sheet pan and drizzle with olive oil, sprinkle with a little salt and pepper. Place salmon filets on sheet pan and coat tops with butter mixture. Top with sliced lemon.
Step 4
Bake at 450 degrees F for 10-12 mins until medium well, then turn the oven to BROIL for 2-3 minutes until tops of salmon are golden brown.
