Bacon Wrapped Chicken Sheet Pan Dinner

Ingredients

  • 8 chicken thighs
  • 8 thick slices bacon
  • 1lb brussel sprouts (sliced in half)
  • 1 tablespoon olive or avocado oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder

Directions

Step 1
Preheat oven to 375F. Add sliced brussel sprouts to sheet pan. Toss with olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.
Step 2
Lightly season chicken thighs with garlic powder, remaining 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Wrap slice of bacon around each chicken thigh. Place on sheet pan with brussel sprouts.
Step 3
Bake for approximately 30 minutes or until chicken reaches an internal temperature of 160.
