Ingredients

  • 1/2 cup coconut cream or heavy cream
  • 6oz sugar free chocolate chips
  • 1 cup roller oats
  • 1 cup Kodiak Cakes 'all purpose baking mix'
  • 1 teaspoon baking soda
  • 3/4 cups baking stevia or brown sugar
  • 25 caramel baking squares
  • 1/2 cup butter

Directions

Step 1
Preheat oven to 350. Grease an 8×8 pan with non stick spray or butter or line it parchment paper.
Step 2
Combine melted butter and brown sugar in a large bowl or stand mixer. Add Kodiak mix, oats, and baking soda. Mix until combined well.
Step 3
Divide the cookie mixture in half and pat half of the mix into the bottom of the pan forming the crust. Bake for 10 minutes and remove from oven.
Step 4
While the crust is baking, combine the caramels and heavy cream in a saucepan set to medium heat. Stir until completely melted and smooth.
Step 5
Remove pan from the oven, sprinkle chocolate chips over the crust. Pour warm melted caramel mixture over the chocolate chips and crumble remaining cookie dough on top. Bake for 15-20 minutes until the edges are lightly brown.

Step 6
Remove from oven and let cool completely or place in the fridge to set.
