Instant Pot Cabbage Roll Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 Small sliced onion
  • 1lb grass fed ground beef
  • 16oz canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1lb green cabbage (roughly chopped)
  • 4 cups beef bone broth or beef stock
  • 1 tablespoon italian seasoning mix
  • 1 teaspoon salt

Optional

  • 1/2 cup baby carrots

Directions

Step 1
Turn ON Instant Pot and set to SAUTE function +5 minutes. Add olive oil and onions. Sauté for 1 minute. Add ground beef and brown meat. Add remaining ingredients and stir to combine.
Step 2
Turn Instant Pot OFF, then back ON and set to SOUP/STEW +20 minutes. Replace lid and close valve. When timer goes off, naturally release steam. Stir soup and adjust seasoning if needed.
