Ingredients

  • 3 Large whole eggs
  • 2 cups almond flour
  • 2 scoops Perfect Keto 'vanilla' collagen powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/4 cup swerve, golden Lakanto, or keto friendly sweetener of choice
  • 1/4 cup butter or ghee (melted)
  • 1/4 cup almond milk
  • 1/2 cup wild blueberries

Directions

Step 1
Preheat oven to 350 degrees F and line a cupcake pan with 12 liners or coat with butter, coconut oil, or non-stick spray. Set aside.
Step 2
Add almond flour, baking powder, salt, and Perfect Keto collagen to a small bowl. Whisk to combine. Set aside.
Step 3
Add eggs, vanilla extract, and milk to a large bowl or stand mixer. Beat on high for 1-2 minutes until light and fluffy. Drizzle in melted butter. With mixer set to low speed, slowly add dry ingredients to wet ingredients just until combined and smooth. Stir in blueberries.
Step 4
Divide and portion into prepared pan. Bake for 15-18 minutes until golden brown on the edges and a toothpick comes out clean when poked through the center of each cupcake.
