Perfect Keto- Java Chip Swirl Ice cream

Ingredients

  • 2 cups coconut cream or heavy cream
  • 2 tablespoons brewed espresso (cooled)
  • 2 egg yolks
  • 1/4 cup swerve, golden Lakanto, or keto friendly sweetener of choice
  • 1/2 cup keto friendly chocolate chips
  • 4 tablespoons Perfect Keto Nut Butter

Directions

Step 1
Add coconut cream (or heavy cream), egg yolks, brewed espresso, and sweetener to a small pot. Cook under low fire for 5-6 minutes while whisk frequently until mixture is smooth and just comes to a small bubble. Remove from heat and let cool for 15 minutes.
Step 2
Add mixture to an ice cream maker and churn according to manufacturers instructions. When mixture becomes soft serve consistency, add chocolate chips.
Step 3
Remove from ice cream maker and pour into a freezer safe container. Swirl in Perfect Keto nut butter. Enjoy immediately as a soft serve ice cream or freeze until firm.
