Step 1

| Preheat oven to 400 degrees. Lightly season chicken with 1 teaspoon of salt and 1/4 teaspoon of pepper. Set aside. Add 3-4 cups of water to a large pot and add the chopped cauliflower. Bring the water to a boil and cook the cauliflower until it just begins to soften, about 7-9 minutes.
Drain cauliflower from pan and set aside. |

| Add heavy cream, dijon mustard, paprika, remaining salt and pepper, and lemon juice to the pot. Cook over medium-low heat for about 10 minutes until sauce begins to thicken. Taste and adjust seasoning to taste. Stir in cauliflower and chicken. |

Step 3

| Pour into a 9x13 casserole dish. Add ham and top casserole with swiss cheese slices. Sprinkle with ground pork rinds. Bake for 25-30 minutes until top is golden brown. |
