Step 1

| Preheat oven to 350 degrees and line a 9 inch square pan with parchment paper. Set aside. |

| In a large bowl or stand mixer, make shortbread by combining the almond flour, coconut flour, coconut oil, maple syrup, and salt. Mix until well combined. Press 3/4 of the dough into the bottom of the pan and save the remaining 1/4 in a small bowl for the topping. |

| Bake shortbread for 12-14 minutes until lightly browned on edges. Make the apple layer while shortbread is baking. Add apples, apple pie spice, cinnamon, and salt to a small pot set to low-medium heat. Stir to combine. Stir in the maple syrup. Cook for 5-7 minutes until apples are slightly softened. Add 1-2 tablespoons of water if needed to prevent mixture from burning. |

| Remove shortbread from oven. Pour apple mixture onto shortbread. Sprinkle tops with remaining shortbread dough. Add nuts if desired. Sprinkle on an additional 1/4 teaspoon of apple pie spice. |

| Bake for 20-25 minutes until edges are golden brown. |
