Ingredients
- 3 tablespoons softened butter
- 1/4 cup swerve, golden Lakanto, or keto friendly sweetener of choice
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon maple extract
- 1 eggs
- 1 cup almond flour
- 1 pinch salt
- 1/4 cup chopped pecans

| Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set aside. | |

| Cream butter and sweetener together in a mixing bowl or stand mixer. Whip for 1-2 minutes until light and fluffy. Add vanilla, maple extracts and egg. With mixer on, add flour and salt. Mix just until well combined and dough forms. Stir in chopped pecans. | |

| Divide and portion dough with a small cookie scoop. Place on prepared baking sheet. Top with an extra pecan if desired. Bake 12-14 minutes. | |
