Ingredients
- 4 cups chicken bone broth
- 4 chicken breasts (boneless, cooked, and shredded)
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1/4 teaspoon xanthan gum
- 3 tablespoons butter
- 2 carrots (roughly chopped)
- 1 cup celery (roughly chopped)
- 1 onion (roughly chopped)
- 2 cups heavy cream or coconut cream

| Melt butter In a large saucepan set to medium heat. Add carrots, celery and onion. Add salt and pepper. Saute for 5-6 minutes until vegetables are slightly softened. Stir in shredded chicken. Pour in broth and cream. Cook for 8-10 minutes under low-medium heat. | |
