Ingredients

  • 1 3/4 cup almond flour
  • 1/4 teaspoon xanthan gum
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup softened butter
  • 1/3 cup powdered Swerve, erythritol, or Lakanto keto friendly sweetener
  • 1 teaspoon almond extract
  • 1 egg yolk
  • 3 tablespoons sugar free raspberry jam

Directions

Step 1
Preheat oven to 350 degrees and line a baking sheet with parchment paper. Combine flour, xanthan gum, baking powder, and salt in a small bowl. Set aside.
Step 2
In a medium sized bowl or stand mixer, whip butter and sweetener together until light and fluffy. Add egg yolk and extract. Beat in flour mixture and mix just until combined.
Step 3
Divide and portion dough and place onto prepared baking sheet. Press the center of each cookie dough ball. Spoon 1/2 teaspoon of jam into center of each cookie.
Step 4
Bake for 10-12 minutes just until edges have slightly turned golden brown. Let cool until jam is set.
