Step 1

| Combine cream cheese and butter in a large mixing bowl or stand mixer. Whip until light and fluffy. Add mint extract. Slowly add in powdered sugar and mix until smooth. Taste mixture and adjust sweetness & mint extract if needed. |

| Separate mixture into different bowls (however many colors you like). Add a few drops of food coloring to each bowl, stir well until color is consistent. Cover and place in fridge to harden for 1-2 hours. |

Step 3

| Line 2 baking sheets with parchment paper. Divide and portion mixture into small balls using a cookie scoop. Roll into a smooth ball with hands. Place on baking sheet. Press each mint with a fork to flatten. Let rest at room temperature for at least 6 hours until firm. Store in an airtight container. Mints can be placed in the fridge or freezer. |
