January- Keto Cookie Dough Bites

Ingredients

  • 8 tablespoons butter (softened)
  • 1/3 cup swerve, golden Lakanto, or keto friendly sweetener of choice
  • 2 tablespoons 'vanilla' MuscleEgg egg whites
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/2 cup sugar free chocolate chips

Directions

Step 1
Add softened butter, MuscleEgg, sweetener, and vanilla extract to a large bowl or stand mixer. Beat on high until light and fluffy. Slowly add almond flour until mixture forms into a dough. Fold in chocolate chips and stir until well distributed. Place mixture in the fridge for 15 minutes.
Step 2
When mixture has firmed up, use a small cookie scoop to portion and divide dough. Form into small balls and place on a cookie sheet or small tray. Store in the fridge for up to one week.
