Loaded Greek Chicken Salad

Ingredients

  • 4 cooked chicken breasts (cooled and roughly chopped or shredded)
  • 4 thick slices cooked bacon
  • 1 Small red onion (thinly sliced)
  • 1/3 cup olives (roughly chopped)
  • 1/4 cup roasted red pepper (thinly sliced)
  • 1/3 cup mayonnaise
  • 2-3 tablespoons lemon juice
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Optional

  • 1/3 cup crumbled feta cheese

Directions

Step 1
Add mayo, lemon juice, salt, and pepper to a large bowl. Whisk well until well combined.
Step 2
Add remaining ingredients to bowl. Toss until everything is well coated.
Step 3
Serve on lettuce cups, on a bed of greens, or with crackers.
