Blueberry Crumble Bars

Ingredients
- 1 1/2 cup oat flour
- 1/2 cup coconut sugar
- 1/4 cup softened coconut oil
- 1 tablespoon honey
- 15 drops Vanilla Cream Stevia
- 3/4 teaspoons cinnamon
- 1 pinch salt
- 1/2 cup Chobani 0% Plain Greek Yogurt
- 1 Large whole egg
- 1 teaspoon vanilla extract
- 30 drops Lemon Stevia
- 1 1/2 tablespoon fresh squeezed lemon juice
- 1/4 cup oat flour
- 1 cup fresh blueberries
Directions

| Preheat oven to 350 degrees. Grease a loaf pan with non stick spray or line bottom/side with parchment paper. | |

| Place first 7 ingredients in a bowl and mix with your hands until a course crumble forms (1 1/2 cups oat flour, coconut sugar, coconut oil, honey, vanilla stevia, cinnamon, salt). Place in the fridge. | |

| In another bowl mix Greek yogurt, egg, vanilla, lemon stevia, juice from lemon, 1/4 cup oat flour until well combined and smooth. Fold in blueberries. | |

| Take crumble from fridge and place 1/2 of the mixture into loaf pan as evenly as possible. Pour in wet mixture. Add remaining crumble mixture on top of wet mixture evenly. | |

| Bake for 25-30 minutes until center mixture feels and looks set. | |

| Let cool completely and place in the fridge to set firmly. Slice and serve. | |
