Ingredients

  • 1 cup oat flour (** BASE **)
  • 1/4 cup PB2 (powdered peanut butter) (** BASE **)
  • 1 scoop Peanut Butter Marshmallow Trutein Protein (** BASE **)
  • 1/3 cup Vanilla MuscleEgg egg whites (** BASE **)
  • 1 Large whole egg (** BASE **)
  • 1/2 cup unsweetened almond milk (** BASE **)
  • 1/2 teaspoon baking powder (** BASE **)
  • 1/2 teaspoon vanilla extract (** BASE **)
  • 1 cup strawberries (** FILLING **)
  • 2 teaspoons lemon juice (** FILLING **)
  • 5-7 drops Berry Sweet Leaf Stevia (** FILLING **)
  • 1 teaspoon lemon zest (** FILLING **)
  • 1/2 tablespoon chia seeds (** FILLING **)
  • 1/4 cup peanut butter (** FILLING **)
  • 2 tablespoons peanut butter (** CRUMBLE **)
  • 1 tablespoon coconut oil (** CRUMBLE **)
  • 1 tablespoon Sugar Leaf Stevia (** CRUMBLE **)
  • 1/2 cup oat flour (** CRUMBLE **)
  • 1/4 cup oats (** CRUMBLE **)
  • 1/4 teaspoon salt

Directions

Step 1
Preheat oven to 325 degrees and coat a 9x9 pan with non stick spray.
Step 2
In a medium sized bowl, combine base ingredients until well combined. Pour in prepare dish.
Step 3
In a small food processor, blend strawberries, zest, stevia, and lemon juice until smooth. Stir in chia seeds. Pour mixture over base. Add small spoonfuls of peanut butter over strawberry mixture and swirl with the back of a knife.
Step 4
In a small bowl, combine all crumble ingredients. Spread evenly over strawberry/peanut layer and bake for 25-30 minutes until golden brown.
