Blueberry Cornbread Muffins

Ingredients
- 1 1/2 cup Kodiak Power Cakes Mix
- 3/4 cups corn meal
- 1/2 teaspoon baking powder
- 1 Large whole egg
- 1/4 cup Vanilla MuscleEgg egg whites
- 3 tablespoons honey
- 1/2 cup Sweet Leaf Stevia
- 1 cup buttermilk
- 1/2 cup blueberries
Directions

| Preheat oven to 350 degrees and coat a muffin pan with non stick spray (recipe makes 8 muffins). | |

| Combine all ingredients in a large bowl (EXCEPT for blueberries) and mix until smooth. Stir in blueberries. | |

| Pour batter into muffin pan and bake for 20-25 minutes until a toothpick comes out clean when poked through the center of one muffin. | |

| Let cool slightly and drizzle with extra honey if desired. | |
