Blondie Energy Bars

Ingredients

  • 1/2 cup quick oats
  • 1/2 cup rolled oats
  • 1 scoop PEScience 'Blondie' Protein (30% off coupon below)
  • 1 tablespoon flax meal
  • 2 tablespoons chia seeds
  • 1/4 cup dried apricots (or dried fruit of choice)
  • 3 tablespoons sliced almonds
  • 1 tablespoon VitaFiber Syrup (www.shop.mysweetit.com)
  • 1/4 cup sun butter (or nut butter of choice)
  • 1/4 cup Vanilla MuscleEgg egg whites
  • 1 'Cocoa Almond' SquareBar (www.squarebars.com)

Directions

Step 1
Line a 9x9 pan with parchment paper. Heat VitaFiber syrup and sun butter/nut butter until smooth (softened, but not yet bubbling). Turn off heat.
Step 2
In a large bowl, stir together oats, flax, protein, chopped apricots, chia seeds, and almonds. Add sun butter/nut butter & syrup mixture and stir. Add MuscleEgg egg whites and mix until well combined. Stir in chopped SquareBar or chocolate chips.
Step 3
Place mixture into prepared pan and press down evenly towards the edges. Refrigerate for 2-3 hours or overnight until set. Remove from pan and slice into bars.
