Pumpkin Nutella ‘Superfood’ Mini Protein Muffins

Ingredients

  • 1 cup Kodiak 'Superfood' baking mix
  • 1 teaspoon pumpkin pie spice
  • 3/4 teaspoons cinnamon
  • 1 scoop PEScience 'Snickerdoodle' Select protein
  • 3/4 teaspoons vanilla extract
  • 3 tablespoons canned pumpkin
  • 1/3 cup Pumpkin Spice MuscleEgg egg whites
  • 3oz finely shredded zucchini
  • 5/8 cups milk of choice
  • 40-50 drops English Toffee Sweet Leaf Stevia drops (or sweetener of choice)
  • 3 heaped tablespoons Nutella

Directions

Step 1
Preheat oven to 350 degrees and coat a mini muffin pan with non stick spray.
Step 2
In a large bowl, combine all ingredients (EXCEPT Nutella). Mix for 2-3 minutes until smooth.
Step 3
Spoon 1 tablespoon of batter into each mini muffin. Place 1/2 tsp (or more if desired) of Nutella onto batter. Cover each with remaining batter until 3/4 full.
Step 4
Bake for 8-10 minutes.
