Pumpkin Nutella ‘Superfood’ Mini Protein Muffins

Ingredients
- 1 cup Kodiak 'Superfood' baking mix
- 1 teaspoon pumpkin pie spice
- 3/4 teaspoons cinnamon
- 1 scoop PEScience 'Snickerdoodle' Select protein
- 3/4 teaspoons vanilla extract
- 3 tablespoons canned pumpkin
- 1/3 cup Pumpkin Spice MuscleEgg egg whites
- 3oz finely shredded zucchini
- 5/8 cups milk of choice
- 40-50 drops English Toffee Sweet Leaf Stevia drops (or sweetener of choice)
- 3 heaped tablespoons Nutella
Directions

| Preheat oven to 350 degrees and coat a mini muffin pan with non stick spray. | |

| In a large bowl, combine all ingredients (EXCEPT Nutella). Mix for 2-3 minutes until smooth. | |

| Spoon 1 tablespoon of batter into each mini muffin. Place 1/2 tsp (or more if desired) of Nutella onto batter. Cover each with remaining batter until 3/4 full. | |

| Bake for 8-10 minutes. | |
