Lemon Blueberry Protein Muffins

Ingredients
- 1 cup Kodiak Cakes 'Super Food' Mix
- 1 Large lemon (zested & juiced)
- 1 scoop Gourmet Vanilla PEScience protein
- 1/3 cup Sweet Leaf Stevia (or sweetener of choice)
- 1 teaspoon vanilla extract
- 1/4 cup 0% Greek yogurt
- 1/4 cup Vanilla MuscleEgg egg whites
- 3/4 cups milk of choice
- 3/4 cups dried blueberries (roughly chopped)
Directions

| Preheat oven to 350 degrees and coat a cupcake pan with non stick spray or line with cupcake liners. | |

| In a large bowl, combine all ingredients except blueberries. Mix well until smooth. Stir in blueberries. Divide batter and pour into prepared pan. Bake for 12-15 minutes until tops are golden brown. | |
