Lemon Blueberry Protein Muffins

Ingredients

  • 1 cup Kodiak Cakes 'Super Food' Mix
  • 1 Large lemon (zested & juiced)
  • 1 scoop Gourmet Vanilla PEScience protein
  • 1/3 cup Sweet Leaf Stevia (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • 1/4 cup 0% Greek yogurt
  • 1/4 cup Vanilla MuscleEgg egg whites
  • 3/4 cups milk of choice
  • 3/4 cups dried blueberries (roughly chopped)

Directions

Step 1
Preheat oven to 350 degrees and coat a cupcake pan with non stick spray or line with cupcake liners.
Step 2
In a large bowl, combine all ingredients except blueberries. Mix well until smooth. Stir in blueberries. Divide batter and pour into prepared pan. Bake for 12-15 minutes until tops are golden brown.
