Key Lime Pitaya Chia Seed Parfait

Ingredients

  • 4 tablespoons chia seeds
  • 2/3 cups milk of choice
  • 1/2 teaspoon coconut extract
  • 3 tablespoons Pitaya Plus smoothie pack/puree
  • 2 tablespoons honey or sweetener or choice
  • 1/2 cup 0% Greek yogurt
  • 3 tablespoons Key Lime MuscleEgg
  • 2 teaspoons lime zest
  • 2 heaped tablespoons lime juice
  • 1 scoop PEScience Gourmet Vanilla protein

Directions

Step 1
In a small mason jar, add chia seeds, milk, pitaya, and sweetener to taste. Stir until well combined and let sit in fridge for 2-3 hours or overnight.
Step 2
In a stand mixer, combine Greek yogurt, MuscleEgg, lime juice, lime zest, and protein powder. Whip until fluffy, about 1-2 minutes.
Step 3
Layer chia seed/pitaya mixture and top with fruit or granola if desired.
