Gluten Free Pumpkin Chocolate Chip Cookies

Ingredients

  • .5 cup coconut oil
  • 1 cup canned pumpkin
  • .5 cup coconut sugar
  • .25 cup baking stevia
  • 1.5 teaspoons vanilla extract
  • .25 cup Pumpkin Spice MuscleEgg
  • .5 teaspoon baking powder
  • .5 teaspoon baking soda
  • 2 teaspoons cinnamon
  • .5 teaspoon salt
  • 2 cups gluten free Kodiak mix
  • 1 cup Enjoy Life chocolate chips

Directions

Step 1
Preheat oven to 350 degrees and line 2 sheet pans with parchment paper.
Step 2
Add all ingredients (except chocolate chips) into a stand mixer or large bowl. Beat until smooth. Stir in chocolate chips.
Step 3
Divide and portion dough onto cookie sheets. Bake 10-12 minutes.
