21- avocado tuna salad boats

Ingredients

  • 1 Large avocado
  • 1 can tuna in olive oil
  • 3 tablespoons red onion (thinly sliced)
  • 3 tablespoons lime juice
  • 1/2 cup cucumber (diced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 Large Romaine lettuce leaves

Directions

Step 1
Add tuna to a medium sized bowl and break apart with a fork. Add remaining ingredients except lettuce. Mix well until thoroughly combined. Adjust seasoning to taste. Add mixture to lettuce cups and garnish with fresh parsley or cilantro if desired.
