| Heat a small cast iron skillet or pan under low-medium heat and melt butter. Beat eggs, heavy cream, salt, and pepper in a small bowl. Add eggs to pan and cook under low heat for 2-3 minutes. You want to under cook eggs slightly because they will finish cooking in the oven. Sprinkle on cheddar cheese and stir. Remove from heat. |

| Place a slice of ham on a work surface or cutting board. Add some scrambled eggs to ham. Roll ham, press to seal, and place on a sheet pan. Repeat with remaining ingredients. |

| Place sheet pan under broil in the oven until ham is golden brown and crisp. |
