Step 1

| Add lime zest, juice, stock, and seasonings to the bottom of the Instant Pot. Stir well to combine. Add pork shoulder. Return lid, seal, and close valve. |
Step 2

| Press MANUAL +35 minutes. When timer goes off, release pressure manually. Meat should shred easily, if it seems tough still return lid, seal, and cook on MANUAL for an additional 10 minutes. |
Step 3

| When pork is done, remove meat from Instant Pot and place on a large baking sheet. Add 1 cup of liquid from Instant Pot. Place under BROIL in the oven for 7-10 minutes until top is crispy and golden brown. |
Step 4
|
| Serve on lettuce cups, add sliced avocado, onions, tomatoes, cilantro, and other toppings of choice. |
