Ingredients

  • 1/4 teaspoon Chipotle powder
  • 2lb Pork shoulder blade (boneless)
  • 1 cup Bone broth or chicken stock
  • 1/2 teaspoon Chili powder
  • 1/4 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 tablespoon Garlic powder
  • 1 Large Lime (zest and juiced reserved)

Directions

Step 1
Add lime zest, juice, stock, and seasonings to the bottom of the Instant Pot. Stir well to combine. Add pork shoulder. Return lid, seal, and close valve.
Step 2
Press MANUAL +35 minutes. When timer goes off, release pressure manually. Meat should shred easily, if it seems tough still return lid, seal, and cook on MANUAL for an additional 10 minutes.
Step 3
When pork is done, remove meat from Instant Pot and place on a large baking sheet. Add 1 cup of liquid from Instant Pot. Place under BROIL in the oven for 7-10 minutes until top is crispy and golden brown.
Step 4
Serve on lettuce cups, add sliced avocado, onions, tomatoes, cilantro, and other toppings of choice.
