21- Greek Chicken Bowls

Ingredients

  • 6 chicken breasts
  • 1/4 cup olive oil
  • 2 Medium lemons (zest and 1/3 cup of juice reserved)
  • 3/4 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 teaspoons oregano
  • 3/4 teaspoons thyme
  • 1/2 teaspoon rosemary
  • 3 cloves garlic (finely minced)
  • 4 cups romaine lettuce
  • 1/4 cup sliced red onion
  • 1 Small tomato
  • 1/2 cup olives

Optional

  • 1/4 cup feta cheese

Directions

Step 1
Add olive oil, lemon juice, lemon zest, garlic, seasonings, and spices to a large bowl. Whisk well until combined. Add chicken and coat. Cover and let marinade in the fridge for 2-3 hours.
Step 2
When you are ready to cook chicken, heat a grill pan and brush with olive oil or coat with non stick spray. Cook chicken on both sides for 3-4 minutes until cooked through. Remove from heat and let rest.
Step 3
Serve over romaine lettuce, red onion, tomato, olives, and optional feta cheese. Garnish with fresh parsley. Use dressing if desired.
