Step 1

| Preheat oven to 425 degrees and coat the bottom of a baking dish with nonstick spray. |

| Cut zucchini lengthwise and use a small spoon to to scrape out the center. Brush zucchini with 1/2 tablespoon of olive oil and sprinkle with 1 teaspoon of kosher salt, 1/4 teaspoon of pepper, and 1 teaspoon of garlic powder. Roast zucchini for 15-20 minutes until slightly softened. |

| While zucchini is roasting add 1/2 tablespoon of olive oil to a cast iron pan Cook onions for 3-4 minutes until tender. Add ground beef, tomato paste, 2 teaspoons of garlic powder, 1 teaspoon of salt, 1/4 teaspoon of pepper, broth/stock, and Italian seasoning . Cook under medium heat for 4-5 minutes until browned. Add parsley. Reduce and simmer for 10 minutes. Adjust seasoning if needed. |

| When zucchini is done, remove from oven and fill centers with ground beef mixture. Top with mozzarella cheese and bake for 10 minutes just until cheese is melted and golden brown. Remove from oven and sprinkle with parmesan cheese and extra parsley if desired. |
