21- Shrimp Scampi

Ingredients

  • 1lb shrimp
  • 4 cloves garlic (finely minced)
  • 2 Large shallots
  • 1 Large lemon (zest and juice reserved)
  • 2 tablespoons parsley (roughly chopped)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pinch red pepper flakes
  • 1/4 cup butter
  • 1/4 cup dry white wine
  • 1/4 cup bone broth or chicken stock
  • 3/4 cups parmesan cheese

Directions

Step 1
In a large cast iron skillet melt 1 tablespoon butter over medium heat. Add shrimp and season with salt and pepper. Cook until pink, 2 minutes per side. Remove from heat and transfer to a plate.
Step 2
Add remaining butter and garlic to pan. Cook for 1 minute until fragrant. Add wine, broth, lemon juice, zest, and crushed red pepper flakes and simmer 2 minutes, then add Parmesan and parsley and let cook 2 minutes more. Add zucchini noodles or low carb noodles of choice, toss until completely combined. Garnish with parmesan cheese.
