Apple Pie Shortbread Bars

Ingredients

  • 2 cups almond flour (Shortbread Layer)
  • 1 tablespoon coconut flour (Shortbread Layer)
  • 1/4 teaspoon salt (Shortbread Layer)
  • 1/3 cup coconut oil (melted) (Shortbread Layer)
  • 1/2 cup sugar free maple syrup (Shortbread Layer)
  • 2 cups apples (finely chopped) (Apple Layer)
  • 3 tablespoons sugar free maple syrup or coconut sugar (Apple Layer)
  • 1 1/2 teaspoon apple pie spice (Apple Layer)
  • 1/2 teaspoon cinnamon (Apple Layer)
  • 1 pinch salt (Apple Layer)
  • pecans or walnuts (roughly chopped) (optional topping)

Directions

Step 1
Preheat oven to 350 degrees and line a 9 inch square pan with parchment paper. Set aside.
Step 2
In a large bowl or stand mixer, make shortbread by combining the almond flour, coconut flour, coconut oil, maple syrup, and salt. Mix until well combined. Press 3/4 of the dough into the bottom of the pan and save the remaining 1/4 in a small bowl for the topping.
Step 3
Bake shortbread for 12-14 minutes until lightly browned on edges. Make the apple layer while shortbread is baking. Add apples, apple pie spice, cinnamon, and salt to a small pot set to low-medium heat. Stir to combine. Stir in the maple syrup. Cook for 5-7 minutes until apples are slightly softened. Add 1-2 tablespoons of water if needed to prevent mixture from burning.
Step 4
Remove shortbread from oven. Pour apple mixture onto shortbread. Sprinkle tops with remaining shortbread dough. Add nuts if desired. Sprinkle on an additional 1/4 teaspoon of apple pie spice.
Step 5
Bake for 20-25 minutes until edges are golden brown.
