APRIL: Almond Poppy Seed Pancakes

Ingredients

  • 1 cup Kodiak Cakes 'Almond Poppy Seed' baking mix
  • 2 tablespoons granulated sweetener of choice
  • 1/3 cup buttermilk or milk of choice
  • 3/4 cups greek yogurt
  • 1 Large whole egg
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest

Directions

Step 1
Add ingredients to a large bowl and whisk well until batter is smooth. Let sit for 5 minutes.
Step 2
Preheat pan or griddle and coat with non stick spray, butter, or coconut oil. Divide and pour batter. Cook 2-3 minutes on the first side, flip and cook an additional 1 minute until both sides are golden brown. Serve with maple syrup.
