Ingredients
- 1 cup Kodiak Cakes 'Almond Poppy Seed' baking mix
- 2 tablespoons granulated sweetener of choice
- 1/3 cup buttermilk or milk of choice
- 3/4 cups greek yogurt
- 1 Large whole egg
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
Directions

Add ingredients to a large bowl and whisk well until batter is smooth. Let sit for 5 minutes. | |
Step 2 | |
Preheat pan or griddle and coat with non stick spray, butter, or coconut oil. Divide and pour batter. Cook 2-3 minutes on the first side, flip and cook an additional 1 minute until both sides are golden brown. Serve with maple syrup. |
