Ingredients
- 1 Medium avocado
- 2 Large whole eggs
- 2 thick slices bacon
- 1 tablespoon chives or green onion
Directions

| Preheat oven to 425 degrees. | |

| Slice open avocado and remove seed. Place each half of avocado in a cupcake holder/tin. Crack and egg into each 1/2 of the avocado. Depending on the size of your avocado seed, you may have to remove some of the flesh in order for the egg to fit. | |

| Sprinkle with a pinch of salt and pepper. Bake for 14-16 minutes until egg is set. Meanwhile, fry up bacon until crispy. | |

| Remove avocado from oven, sprinkle with chopped herbs and bacon. | |
